While they have plenty of controversy as nightshade plants, eggplants are wonderful vegetables that can be used in various ways. They are also very nutritious. They contain fiber, potassium, and vitamin B6 among many other vitamins.
What’s fun about this eggplant salad is that it is not dripping with liquids, so you can put it into sandwiches, eat it on the go without the worry of making a mess while eating.

Easy Eggplant Salad with Green Bell Peppers
- 3 Eggplants
- 3 Green bell peppers
- 5 cloves garlic
- 3 tablespoons olive oil
- Lemon juice
- Lemon for decoration
Cut up the eggplants into 1 inch circles. Then put them in the oven to cook.
After one side cooks, be sure to flip over the eggplants so we have a well-cooked salad!
Then, in a bowl, set the eggplants aside while you chop the green bell peppers, and the garlic. Mix them all together.
Add lemon juice and olive oil. Be sure not to over mix, so that the eggplants do not lose their shape. Add salt and pepper to your preference.
Then, decorate with a lemon, cut up into fun shapes! Enjoy!
