I am a H.U.G.E. fan of artichokes. They’re yummy, healthy – and, best of all, very easy to cook. Not only are they low in calories, artichokes are also a good source of sodium, protein, vitamin A, and even calcium. So put down that glass of milk, let me show you a nice, easy artichoke salad that is wonderful to accompany almost any dish. And even on its own ti’s just delicious. Promise!
Awesome Artichoke Salad
- 2 packets of frozen artichokes (14 ounces)
- 2 tablespoons lemon juice
- 2 tablespoons mustard
- 2 tablespoons olive oil
- Salt and pepper (up to your preferences)
First, boil the frozen artichokes for about half an hour until cooked. Drain the pan and then cut them into bite-sized pieces.
Then, in a bowl mix in the lemon juice, mustard, and olive oil.
Add salt and pepper and toss the mixture so that it is ready to be eaten.
You can decorate the artichoke salad with parsley or slices of lemon; make it colorful. Remember, the more colors are in your food, the healthier it is!
